CANTUCCI TO HAZEL


Non saltatemi in testa se questa non è la ricetta ufficiale dei Cantucci, direi che comunque ci assomigliavano davvero tanto. Io ho usato le nocciole perché le preferisco, vanno comunque benissimo anche le mandorle se le preferite.






Ingredienti:

  • 150 g hazelnuts, toasted and peeled
  • 250 grams of flour
  • 200 grams of sugar
  • 2 eggs 1 tablespoon milk
  • 1 teaspoon baking powder
  • 1 teaspoon of vanilla extract







Working up the eggs with sugar, add milk, vanilla, nuts and flour sifted with yeast. Knead until smooth. Divide into two loaves slightly crushed (I have done a nice wide), place on baking tray lined with baking paper, brush with milk or a beaten egg yolk (optional) and bake at 180 degrees for about 15 minutes, until golden . Let cool and cut into slices with a sharp knife diagonal width of about 1 to 1.5 cm. Should be put back in oven for another 5 min in order to make them stay crispy beautiful but I have not done (and in fact were a bit 'soft).
