I made this cake with buttermilk, which I find no problems in Switzerland. You can easily replace it with yogurt or, better still, sour cream (Or both mixed in equal parts).
Ingredients:
- 1 egg slightly beaten
- 220 ml of buttermilk
- 50 ml of syrup, cranberries or cherries
- 50 ml of oil
- 150 grams of sugar
- 1 teaspoon baking
- 480 grams of flour
- vanilla 1 tablespoon baking
- 4 tbsp desiccated coconut
- 3 tablespoons cherry jam
Mix the egg with sugar, buttermilk, syrup, oil, coconut and finally the flour sifted with baking powder and baking soda. Pour into the cake tin lined with baking paper (slightly wet), do a "channel" in the middle with a teaspoon and make you fall of the piles jam.
Bake in preheated oven at 180 degrees for forty minutes, until golden.
